Beignets? Yes, please! Monday, Feb 7 2011 

There’s nothing like warm beignets for breakfast, is there? Here’s a great, authentic recipe for these homemade donuts.

Ingredients:

1/2 cup shortening
1/2 cup sugar
2 packages yeast
6 1/2 cup flour
1 tsp salt
1 cup evaporated milk
2 well beaten eggs

Directions:

Cream together shortening, sugar and salt. Add 1 cup boiling water and 1 cup milk.

Mix yeast well in 1/4 cup warm water. Add this and beaten eggs to the mixture and mix well. Add 3 1/2 cups flour and beat with spoon. Add another 3 cups flour and mix. Put the dough in a grease covered container and refrigerate.

When ready to fry, roll out the dough in 1/4 inch thick sections. Cut a slit in the middle of each piece.

Fry in deep fat 360 degrees until golden brown on both sides. Drain on paper towels and sprinkle with powdered sugar.

 - Do your research. Spend some time online and talking to trusted boating experts about what you need, want and can afford. Don’t go into a purchase without becoming well versed on what you’re looking for.

-  It’s a commitment. Understand by buying a boat, you’re buying into a lifestyle. What’s a great hobby will also involve a large amount of your time, too. There’s boat maintenance, safety, upkeep, travel time, docking expenses, etc., to also consider.

Check out this great Cajun breakfast recipe. A perfect addition to your holidays!

 Cajun-Style Brunch Bake Recipe

Ingredients:

          6 eggs, lightly beaten

  • 2 cups milk
  • 1 pound sliced bacon, cooked and crumbled
  • 6 slices bread, cubed
  • 1 medium potato, peeled and diced
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1 to 1-1/2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 

Directions

In a large bowl, combine all ingredients. Transfer to a greased 11-in. x 7-in. baking dish. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Yield: 6 servings.

With the cold weather finally upon us, now’s the perfect time to do a little maintenance on your boat to ensure its optimal run when you turn the key in the spring.

Here’s a simple checklist you can use to help keep your investment warm this winter.

- Flush the cooling system.

- Make sure the boat is level to avoid water pooling.

- Clean the boat and cover, but be sure to allow for air circulation to prevent mildew from forming.

- Store the outboard engines in an upright position.

- Spray the engine with fogging oil to prevent rusting.

- Check the spark plugs.

- Hang life jackets up to air out.

- Disconnect the batteries and remove them from the boat.

Boo-tiful Halloween Drinks! Thursday, Oct 28 2010 

To make your Halloween even scarier, here are three drinks to give your weekend a fright. These great recipes and pictures are from Cocktails.about.com.

  

Vampire Kiss Martini

Ingredients:

1 ½ oz Finlandia Vodka

1 1/2 oz Korbel Champagne

3/4 oz Chambord

Red sugar for rimming

Preparation:

Rim the glass with red sugar (use food coloring) or drop in a set of wax vampire teeth for a real surprise. Pour vodka and half of the Chambord in a martini glass.

Top with Champagne. Pour the remaining Chambord over the back of a spoon to make it float.

Bayou Slime Cocktail Recipe – Halloween Martini

Bayou Slime

Ingredients:

2 parts Cruzan Dark Rum

6-8 fresh mint leaves

1/2 part Fee Brothers Spiced Cordial Syrup

1 egg white

Preparation:

Muddle mint leaves and syrup together, making sure to crush the mint leaves. Place all ingredients into a shaker. Shake until well-chilled and frothy. Strain into a chilled martini glass.  Garnish with additional crushed mint leaves.

Candy Corn

Candy corn cocktail

Ingredients:

1 1/2 oz. Kettle Corn-infused Bombay Sapphire Gin (recipe below)

1/2 oz. Moscato wine (sweet dessert wine)

3/4 oz. home-made citrus peel grenadine syrup (recipe below)

3 candy corns for garnish

Additional ingredients needed:

kettle corn

sugar

orange and lemon skins

Preparation:

Add all ingredients to a cocktail shaker with ice. Shake very well. Strain into a chilled cocktail glass. Garnish with 3 candy corns.

Kettle Corn-infused Bombay Sapphire

For every 750ml bottle of Bombay Sapphire, add in 1 cup kettle corn. Allow to infuse in an airtight container for approx. 24 hrs. Fine strain kettle corn and re-bottle. Store in fridge.

Citrus Peel Grenadine Syrup

For every 1 cup of POM wonderful pomegranate juice, dissolve 1 cup granulated sugar over stove top. Once dissolved, add in the skins of 1 orange and 1 lemon and simmer for 10 mins. Remove skins and chill syrup.

Crock Pot Jambalaya! Wednesday, Oct 13 2010 

Check out this great Crock-Pot Jambalaya-Pastalaya from RealCajunRecipes.com. Looks delicious! Crock Pots are such a great way to have a homemade dinner ready and waiting for you by the time you get home from a busy day. And since it’s getting to be Crock-Pot season around here, I’m gonna have to give this one a try.

Crock Pot Jambalaya-Pastalaya

12-oz skinless chicken breast cut in 1” cubes
1 pound smoked sausage
2 bell peppers, chopped
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, minced
1/3 cup tomato paste
1 tbsp dried parsley
½ tbsp oregano
½ tbsp salt
1 can whole tomatoes
1 can beef broth
1 ½ tsp dried basil
1 tsp Tabasco
1 pound shrimp (optional)

 In a Crock Pot, add all together except shrimp. Cook on high for 4 hours. Add shrimp and cook additional 30 minutes. Serve over rice or prepare your favorite pasta and serve.

Fannie Mae National Housing Survey Key Findings Tuesday, Oct 5 2010 

The Fannie Mae National Housing Survey polled homeowners and renters between June 2010 and July 2010 to assess their confidence in homeownership as an investment, the current state of their household finances, views on the U.S. housing finance system, and overall confidence in the economy. Findings were compared to a similar survey conducted by Fannie Mae from December 2009 to January 2010 and released in April 2010, and a similar survey conducted in 2003.  Seventy percent of respondents think it is a good time to buy a house, up six points from January. This is also four points higher than the 2003 survey – well before home prices peaked – when 66 percent said it was a good time.
